{"id":377,"date":"2014-02-13T21:49:13","date_gmt":"2014-02-13T21:49:13","guid":{"rendered":"http:\/\/www.heals.com\/blog\/?p=377"},"modified":"2019-11-12T14:08:20","modified_gmt":"2019-11-12T14:08:20","slug":"valentines-dinner-by-pascale-smets","status":"publish","type":"post","link":"https:\/\/www.heals.com\/blog\/valentines-dinner-by-pascale-smets\/","title":{"rendered":"Romantic Valentine&#8217;s Meal by Pascale Smets"},"content":{"rendered":"\n<p><strong>Chef Pascale Smets shows us how to create the ultimate romantic Valentine&#8217;s meal to delight your loved one.<\/strong><\/p>\n\n\n\n<p>At this time of year we are supposed to\u00a0 show how much we care for our loved ones by producing heart shaped food.<\/p>\n\n\n\n<p>Maybe I\u2019m terribly unromantic but to me this seems quite unnecessary as I think preparing a special meal with the intention of giving pleasure and nourishment is one of the sincerest acts of love and there\u2019s no need for anything complicated, expensive or overtly valentine-y. Another reason to keep it simple is any loved one worth their salt (forgive the pun) will want you spending the evening with them, not in the kitchen struggling with a passion fruit souffl\u00e9.<\/p>\n\n\n\n<p>The menu below is dead simple but looks special, requiring minimum time spent in the kitchen. Everything apart from the poussin can be entirely prepared in advance and even the poussin only requires roasting.<\/p>\n\n\n\n<p style=\"text-align:center\" class=\"has-text-color has-large-font-size has-luminous-vivid-orange-color\"><strong>&#8211;<\/strong><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<div class=\"wp-block-columns has-2-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h2 class=\"wp-block-heading\" id=\"mce_25\">Honey and Pomegranate Roast Poussin<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients for 2:<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>2 Poussin<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">For the marinade:<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>1 onion roughly chopped <\/li><li>4 tbsp olive oil <\/li><li>1 tsp ground ginger <\/li><li>1 tsp ground cinnamon <\/li><li>6 tbsp water <\/li><li>3 tbsp runny honey <\/li><li>1 tbsp Pomegranate Molasses (If you don\u2019t have Pomegranate Molasses substitute with an extra tbsp of honey and the juice of one lemon)<\/li><\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"768\" src=\"https:\/\/www.heals.com\/blog\/wp-content\/uploads\/2014\/02\/Honey-and-Pomegranate-Roast-Poussin-2-1024x768.jpg\" alt=\"Romantic Valentine's Meal | Honey and Pomegranate Roast Poussin recipe by Pascale Smets\" class=\"wp-image-20051\" srcset=\"https:\/\/www.heals.com\/blog\/wp-content\/uploads\/2014\/02\/Honey-and-Pomegranate-Roast-Poussin-2.jpg 1024w, https:\/\/www.heals.com\/blog\/wp-content\/uploads\/2014\/02\/Honey-and-Pomegranate-Roast-Poussin-2-300x225.jpg 300w, https:\/\/www.heals.com\/blog\/wp-content\/uploads\/2014\/02\/Honey-and-Pomegranate-Roast-Poussin-2-768x576.jpg 768w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n<\/div>\n<\/div>\n\n\n\n<h3 class=\"wp-block-heading\">The Method:<\/h3>\n\n\n\n<p>Combine all the marinade ingredients and pour over the poussin. Whenever possible I marinate meat, fish etc. in a ziplock bag which can be turned over so the marinade doesn&#8217;t get everywhere. <\/p>\n\n\n\n<p>Leave to marinate for several hours or even overnight. Put the\u00a0 Poussin into a <strong>small<\/strong> roasting tin with the marinade, remove any bits of chopped onion stuck to the poussin. <\/p>\n\n\n\n<p>Roast at 180 c, basting occasionally for 45 minutes or until the meat between the leg and breast is no longer pink. <br><\/p>\n\n\n\n<p>When basting try not to get bits of onion on the poussin as these tend to burn and don\u2019t let the liquid evaporate, add a couple more tablespoons of water if necessary. The pomegranate molasses will darken on the skin giving the poussin a blackened look like cajun chicken. <br><\/p>\n\n\n\n<p>Sieve the marinade and you will be left with either a deep chocolate ( if you used the Pomegranate molasses) or amber coloured sauce (if you didn\u2019t). If the sauce seems thin boil transfer to a clean pan to reduce to a syrupy consistency.<\/p>\n\n\n\n<figure class=\"wp-block-pullquote\"><blockquote class=\"has-text-color has-luminous-vivid-orange-color\"><p><strong>TOP TIP<\/strong><\/p><p> <strong>How to prepare a lot of parsley fast <\/strong><br> While keeping the parsley in it\u2019s bunch, wash and shake it dry. Hold the bunch of parsley upside down and with a big, <em>very<\/em> sharp knife cut the leaves off using downward strokes. You will end up with some stalks in there but only the fine tip ones and these can just be chopped in with the leaves. <\/p><\/blockquote><\/figure>\n\n\n\n<div class=\"wp-block-columns has-2-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h2 class=\"wp-block-heading\">Saffron Jewelled Couscous<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients:<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>200ml couscous<\/li><li>200ml boiling water<\/li><li>A generous pinch of saffron<\/li><li>2 tbsp olive oil<\/li><li>Large bunch of flat-leaf parsley coarsely chopped<\/li><li>Small bunch of finely chopped mint<\/li><li>1\/2 a small red onion very finely chopped (No more than 40g)<\/li><li>Box of Pomegranate seeds (80-110g)<\/li><li>Juice of 1\/2 a lemonSalt and pepper to taste<\/li><\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"768\" src=\"https:\/\/www.heals.com\/blog\/wp-content\/uploads\/2019\/11\/Honey-and-Pomegranate-Roast-Poussin-1-1024x768.jpg\" alt=\"Romantic Valentine's Meal | Honey and Pomegranate Roast Poussin recipe by Pascale Smets\" class=\"wp-image-20031\" srcset=\"https:\/\/www.heals.com\/blog\/wp-content\/uploads\/2019\/11\/Honey-and-Pomegranate-Roast-Poussin-1.jpg 1024w, https:\/\/www.heals.com\/blog\/wp-content\/uploads\/2019\/11\/Honey-and-Pomegranate-Roast-Poussin-1-300x225.jpg 300w, https:\/\/www.heals.com\/blog\/wp-content\/uploads\/2019\/11\/Honey-and-Pomegranate-Roast-Poussin-1-768x576.jpg 768w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n<\/div>\n<\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Method: <\/h3>\n\n\n\n<p>Add the pinch of saffron to the 200ml boiling water and leave for a few moments to infuse. <\/p>\n\n\n\n<p>Meanwhile stir the 2 tablespoons of olive oil through the couscous with a fork. <\/p>\n\n\n\n<p>Pour over the boiling saffron water and allow to absorb. Once absorbed, fluff with a fork. <\/p>\n\n\n\n<p>Season and then stir through all the other ingredients. <\/p>\n\n\n\n<p>Arrange the cooked poussin on top of the Saffron Jewelled Couscous and your main course is ready to serve.<\/p>\n\n\n\n<p style=\"text-align:center\" class=\"has-text-color has-large-font-size has-luminous-vivid-orange-color\"><strong>&#8211;<\/strong><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<div class=\"wp-block-columns has-2-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h2 class=\"wp-block-heading\" id=\"mce_78\">Blood Orange Salad with Greek Yoghurt and Burnt Sugar<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"mce_95\">Ingredients:<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>6-7 Blood oranges (or regular oranges) with a all pith and membranes removed, in segments<\/li><li>3 tbsp (heaped) full-fat Greek yoghurt<\/li><li>2-3 tbsp caster sugar depending on sweetness of the oranges<\/li><li>Mint leaves to garnish<\/li><\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"768\" src=\"https:\/\/www.heals.com\/blog\/wp-content\/uploads\/2019\/11\/Burnt-Orange-Dessert-Recipe-1024x768.jpg\" alt=\"Romantic Valentine's Burnt Orange Dessert Recipe by Pascale Smets\" class=\"wp-image-20011\" srcset=\"https:\/\/www.heals.com\/blog\/wp-content\/uploads\/2019\/11\/Burnt-Orange-Dessert-Recipe.jpg 1024w, https:\/\/www.heals.com\/blog\/wp-content\/uploads\/2019\/11\/Burnt-Orange-Dessert-Recipe-300x225.jpg 300w, https:\/\/www.heals.com\/blog\/wp-content\/uploads\/2019\/11\/Burnt-Orange-Dessert-Recipe-768x576.jpg 768w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n<\/div>\n<\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Method:<\/h3>\n\n\n\n<p>Once you have removed all skin and pith (see photo) cut between the segments\u2019 membranes\u00a0 with a sharp knife and you\u2019ll be left with much smaller, but membrane free, orange segments. Arrange orange segments on a dish. Spoon the yoghurt in the centre. Sprinkle over the mint leaves. <\/p>\n\n\n\n<p>In a small pan heat the caster sugar, stirring with a wooden spoon until it has melted. <\/p>\n\n\n\n<p>When it is a golden amber colour and bubbling remove from the heat and pour over the dish of oranges and yoghurt.
